Scott has been hard at work to bring you a delicious new Mackerel dish to the tasting menu.

A combination of Cornish mackerel that gets a light cure before being diced. That is then combined with discs of kohlrabi and apple, dill mayonnaise and an apple broth split with apple marigold oil. This is all topped off with a horseradish ice-cream and Exmoor caviar. Watch the video below to hear from Scott all about this fantastic, light dish.
